Overview
The Gurage highlands, a few hours southwest of Addis Ababa, offer one of Ethiopia's most rewarding and least-visited cultural experiences. This is a land of wooded hills, deep river gorges, and immaculate villages connected by ancient pathways known as Jefoure roads — carefully managed green corridors that have shaped Gurage village life for centuries. Walking these trails, you move between communities as a genuine guest: welcomed into traditional homes, fed on local specialities, serenaded by Gurage music, and drawn — if you are willing — into some of the most energetic dancing in the Ethiopian highlands.
This is not a tourist trail. It is an immersion in a living culture, quietly and sustainably managed by the communities themselves, and shaped entirely around the rhythms of daily highland life. For many who make this journey, it is one of the most quietly transformative experiences Ethiopia has to offer.
Highlights
Gurage Culture — Experience the warmth and distinctive character of Gurage hospitality as a genuine guest in three different village homes
The Jefoure Roads — Walk the ancient, community-managed green pathways that give Gurage villages their unique tranquil beauty, with traditional homes set along either side
Food and Cooking — Taste local specialities including kitfo (Gurage-style steak tartare), gomen kitfo (spiced chopped kale), kocho (flatbread made from the root of the false banana tree), and buna — thick black coffee drunk the Gurage way, with butter and salt — and learn to make some dishes yourself
Music and Dance — Listen to traditional Gurage music around the fire and try your hand at their famously energetic dancing
Dramatic Scenery — Trek through wooded hills, deep river gorges, and open highland ridges, with sweeping views across one of Ethiopia's most beautiful landscapes
Wildlife — Look out for Colobus monkeys in the riverine woodland, along with a rich variety of highland birdlife
The Suspension Bridge — Cross a river gorge on a traditional suspension bridge, one of the memorable small moments of the trail
Village Churches and Ancient Trees — Visit hilltop churches with panoramic views, and a vast communal tree beneath which the whole village gathers for celebrations and bonfires
Tranquillity — Perhaps above all, this journey offers something increasingly rare: a few days of simple, unhurried, bucolic life that feels less like a holiday and more like a genuine tonic
Food and Drink
The Gurage people take great pride in their culinary traditions, and eating well is one of the genuine pleasures of this trail. Expect to encounter:
Kitfo — Ethiopia's most celebrated beef dish, Gurage-style: finely minced raw beef, seasoned with spiced butter and chilli. Rich, complex, and utterly distinctive.
Gomen Kitfo — Finely chopped kale or greens, spiced and cooked in the same tradition.
Kocho — Dense flatbread made from the root of the false banana tree, the cornerstone of Gurage cuisine and an acquired taste well worth acquiring.
Araki — A locally distilled spirit, offered in the evenings as a gesture of hospitality.
Buna — Ethiopian coffee, brewed thick and black and served the Gurage way: with a small knob of butter and a pinch of salt. Unusual at first encounter; deeply satisfying once you are converted.
